Perfect for Spring Mornings: Strawberry Orange Muffins {Recipe}

We’ve been lowering the consumption and use of sugar in our home for a while now, particularly for my husband who has borderline diabetes. Whenever I cook or bake, I try to use SPLENDA products to reduce the amount of sugar. Swapping sugar for SPLENDA in recipes provides my husband with alternatives, so he can still enjoy desserts and sweets, but with less sugar and calories. It’s been working out great for our family!

Strawberry Orange Muffins Recipe

With spring officially here, I partnered with The Motherhood and SPLENDA to create a Sweet Swaps recipe that’s perfect for the season. Two fruits that are currently in season for spring are strawberries and oranges, both flavors that inspire freshness and bring about bright colors. To honor the flavors of spring and make a fun recipe the whole family would enjoy, I decided to try baking muffins for the first time. By tweaking a recipe from Pillsbury, I was able to create strawberry orange muffins with less sugar – they’re perfect for a fun after-school snack or even as part of breakfast! Strawberry Orange Muffins (Recipe)

Adapted from Pillsbury Banana Strawberry Muffins Recipe

Ingredients

  • 1 cup SPLENDA No Calorie Sweetener, Granulated
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2/3 cup orange preserves
  • 1 tsp vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh strawberries, rinsed and finely chopped (about 5 medium strawberries)

Strawberry Orange Muffins Recipe, Ingredients Needed

Directions

  1. Heat oven to 375°F and line muffin pan with baking cups.
  2. In large bowl, combine Splenda, oil and eggs. Stir until well-blended.
  3. Add orange preserves and vanilla. Stir to mix.
  4. Mix in flour, baking soda and salt. Stir just until combined.
  5. Stir in strawberries and evenly spoon batter into lined muffin cups.
  6. Bake at 375°F for about 18 minutes or until toothpick comes out clean. Remove from muffin pan and serve or let cool.
