Super Easy On-the-Go Breakfast Burritos, Perfect for Back to School! {Recipe}

My kids started the school year last week and though we usually have plenty of time in the morning to eat breakfast and get ready, there are those occasional days when we’re running a little late. This school year, I’m also encouraging my 4th grade girl to get breakfast for herself more often so that a) she can gain some independence and b) I can tend to other things in my morning routine. As I thought about encouraging breakfast independence and how I could create a simple breakfast meal for my family, I decided to give on-the-go breakfast burritos a try. Check out how I put together these easy and simple breakfast burritos (including fresh produce from Walmart) that are perfect for making ahead and grabbing as an on-the-go breakfast for busy school mornings!

Simple Breakfast: On-the-Go Breakfast Burritos

Super Easy (and Nutritious) On-the-Go Breakfast Burritos!

Ingredients

  • Eggs, 1-2 per burrito
  • Fresh spinach, finely chopped (however much you want per burrito)
  • Tomatoes, finely chopped (however much you want per burrito)
  • Whole-wheat tortillas, burrito size
  • Shredded cheese (however much you want per burrito)
  • Salt & pepper, to taste

Simple Breakfast: On-the-Go Breakfast Burritos

Directions

  1. Crack eggs open into a small bowl. Add spinach, tomato, salt, and pepper.
  2. Whisk egg mixture and pour into heated, greased frying pan.
  3. Scramble eggs until thoroughly cooked.
  4. Layer eggs and shredded cheese onto tortilla and fold burrito, ensuring sides are folded in and secured.
  5. If making ahead for school mornings, wrap burrito in plastic wrap and store in fridge. In the mornings, your family can quickly grab a burrito, warm it up in the microwave and eat on-the-go!

In our family’s case, I’ll be making a variety of on-the-go breakfast burritos. While a spinach and tomato burrito works fine for my husband and I, my kids would prefer either just cheese and eggs or a bacon breakfast burrito. Either way, making a few ahead of time will be great for my oldest to grab, heat up, and then sit down to eat while I get myself ready or help her 4-year-old brother with his morning routine. These on-the-go breakfast burritos will also work great for my husband to grab-and-go on his way to work, especially since he normally skips breakfast!
