It’s hard to find someone who doesn’t love potatoes; I mean, potatoes are so versatile, right? I happen to be a fan of red potatoes, so I decided to make something that I love eating, but have never made myself: red potato salad! You might be surprised to learn that I’ve never made potato salad before now.
While I grew up eating a Puerto Rican version of macaroni salad, somehow making potato salad just didn’t happen. So, here’s the simple recipe I came up with using baby red potatoes and a bit of Dijon mustard. Try this easy potato salad recipe, which is perfect for a summer BBQ or get-together!


Easy Red Potato Salad Recipe
Using fresh red potatoes, this potato salad recipe is perfect for a summer BBQ or grilling side dish.
Ingredients
- 3 lbs baby red potatoes cubed & rinsed
- 1 cup red onions diced
- 1 Tbsp olive oil
- 1 tsp red wine vinegar
- 2 Tbsp mayonnaise
- 2 Tbsp Dijon mustard
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1/2 cup green onions
Instructions

Add potatoes to a large pot with salted water and bring to a boil.

Continue boiling until fork-tender. Drain and set aside.

In large bowl, combine remaining ingredients. Add potatoes and lightly stir to mix.

Refrigerate until ready to serve.
This is such a delicious red potato salad recipe, and it works great as a side dish for summer grilling or when you get together with friends and family for a picnic! I love to leave the skin on the potatoes (one less step!), and the simplicity of the ingredients is a major bonus.

Pair this red potato salad recipe with a delicious steak, grilled chicken, or as part of a vegetarian meal. Though it’s a perfect summer side dish, you can also eat this potato salad year-round.
