Chicken fried rice is a really easy recipe you can make for a quick weeknight dinner. It’s best to use leftover cooked white rice for fried rice recipes, but this simple chicken fried rice recipe also uses precooked chicken for an even faster meal! Traditional Rotisserie Chicken On Sale at Walmart

Buying a precooked rotisserie chicken can help you get dinner on the table quickly on any night. Your first instinct might be to serve the chicken along with some vegetables or other side dish, but you can use rotisserie chicken as an ingredient for cooking other recipes! I made an easy chicken fried rice earlier this week using Walmart’s rotisserie chicken, but you can also make chicken lo mein or another chicken pasta dish, a chicken salad, soup, or tacos – there really are many possibilities!

The great thing about this super easy chicken fried rice recipe is that you can substitute or add any ingredient you want. You can use a favorite vegetable you and your family like instead of mixed vegetables, add scrambled eggs, or even cashews. It’s also a great way to clear the fridge of leftovers by throwing them in the pan to make your chicken fried rice. Chicken Fried Rice Recipe

Chicken Fried Rice Recipe – Only 5 Ingredients!

Ingredients

  • 1 1/2 Tbsp olive oil
  • 1 1/2 – 2 cups cooked chicken, shredded or cubed
  • 2 cups frozen mixed vegetables
  • 2 cups cooked white rice
  • 4 1/2 Tbsp soy sauce

Directions

  1. Add olive oil to a large pan and heat on medium heat.
  2. Add chicken and vegetables and cook until vegetables are tender. It helps if you pre-cook (steam) the vegetables to lessen the cooking time of your chicken fried rice.
  3. Add rice and soy sauce. Stir well and cook about 5 minutes until all ingredients are mixed and rice is heated.

    This looks good and easy to make. Will be trying it soon. However, I’ve heard that when using the cooked rice (I will be cooking mine before-hand) not to add salt when cooking it so that when the soy sauce is added, it’s not salty. Any thoughts on that before I try this recipe? Thanks for your posts. I’ve just lucked on to your web site today and am pretty excited to try some things!

      I’ve never had an issue. I cook my rice as normal (with the salt) because we’re using it for another meal, normally, then later I may use the leftover rice to make a fried rice. You could just control the amount of soy sauce used to avoid it being too salty. If you’re pre-cooking the rice only to use for the fried rice, I suppose there’s no harm in omitting the salt when cooking since you’ll be adding the soy sauce in later. Good luck!

    I wouldn’t recommend cooking rice without salt. In my opinion it tastes “washed” out. I would add some garlic to that too 🙂

      I don’t like the taste of rice without salt myself and always use some salt.
