Cheesy BBQ Chicken Empanadas, Easy Game Day Appetizer! {Recipe}

Football season is in full swing – I know this because each weekend my Facebook feed is filled with various game updates! Though we’re not fans of any particular team, we periodically sit and watch a game. It can be fun for the kids to learn a bit about the sport and it’s especially fun with some yummy game day food! As I was thinking of traditional game time recipes, I decided it might be fun to make empanadas for an easy game day appetizer or snack! With the flavors of BBQ wings in mind, I served Cheesy BBQ Chicken Empanadas to the family and they were a hit! Cheesy BBQ Chicken Empanadas

Cheesy BBQ Chicken Empanadas Recipe

*Makes 10 empanadas

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded (about 2 cups chicken)
  • 6 Tbsp BBQ sauce
  • Shredded cheese, your favorite and to your liking
  • Empanada discs, 1 package thawed per instructions – Depending on where you live, you may find these in the freezer section with other Latin/Caribbean products.
  • Olive oil

Cheesy BBQ Chicken Empanadas

Directions

  1. Preheat oven to 425° F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix chicken and BBQ sauce together.
  3. Line empanada discs on baking sheet, leaving ample space between each one.
  4. Add about 1 Tbsp of chicken mixture to an empanada disc. Then, layer cheese on top, to your liking. (Don’t overfill, since it will be hard to close empanada.)
  5. Fold each empanada disc half-way to make a half-moon shape and pinch closed with a fork around the edge.
  6. Brush each empanada around the edges and over the top with a little olive oil and bake in preheated oven for about 10 minutes, or until golden brown. (Note: You can fry your empanadas too, which is how they are traditionally cooked.)

Tips:

  • Have leftover chicken in the fridge? This recipe is a great way to use it!
  • For a super quick way to make this recipe, purchase already-cooked rotisserie chicken in the Walmart deli that you can then shred!
